Today’s Healthy Monday Tip:
Get good eggs. New York Magazine just put out this great article on how not all eggs are created equal. Pasture-raised eggs are much, much higher in Omega-3 fatty acids, and therefore, much, much better for you.
Those less nutritious industrially-produced eggs come at a greater cost to society and the environment, too–check out Sustainable Table’s Issue Pages for more information on the problems with factory farms.
The article also breaks down the best bacon and suggests baking for a more even cook. It stands to reason, then, that if you bought pasture-raised bacon and baked it, that it would taste better and be healthier, too. Dan Barber calls this Change We Can Stomach.
